Small Farm in Texas

What would you suggest that I grow on a small scale in TX. I am looking for something that doesn't take a lot of equipment.
I have done numerous farm plans for the State of Texas, with several basic regions. One involved new technology to grow chamomile flowerheads. Another grew a certified organic peppermint leaf. And, of course, your various seed growers, like Dessert and Arco. With irrigations, mints do exceptionally well in your region.
I also have a great idea for a small business plan, growing ingredients for an herbal coffee substitute – which you would also roast onsite (cottage industry). Why not have me design something around who you are, and where you want to go? It should take into account some local variables, like what machinery is available.

Some friends even grew upward of 40 acres of scented geraniums in that region, for the floral and potpourri markets.
