Pruning Sage And Thyme

I have a sage and thyme herb plants that are perennials. Do I cut them down for regrowth and when do I cut them down? In the fall or early spring?

Sage will die down to ground level in the winter and the dead top growth should be cut off in the spring. It can act as a mulch during the winter. Thyme should survive the winter as a whole. Never trim off more than one third of the height of any stem. Do it in the spring to shape the plant and later in the season to harvest tops of sprigs to use in cooking.
