Herbs for Winter Use

How and what should I do with my herbs before frost so I can use them this winter?

If you want live herbs this winter, then pot them up as soon as possible and move the pots to the north side of your house for a week before taking them into the house. In the house, put them unto a humidity tray (baking dish half filled with pebbles and with water half way up to the level of the pebbles. Place your pots onto the pebbles, so they will be over but not in water.
If you want them dried for winter use, then cut the annuals all the way down just before frost and dry them on a fly screen in a shady dry spot. The herbaceous perennials should be cut to within 10cm (4") of the ground just before frost and dried just like the annuals. The woody perennials should be trimmed no more than one third of their height and the trimmings dries as before.
