I am just planning a new circular herb bed, and would like to strategically plant some evergreen herbs to maintain interest in winter (Zone 8, Vancouver, B.C, Canada). Also, should other herbs be cut back in fall, or can I wait to clear out what has died til spring?There are few evergreen herbs, but for zone 8 at least there are some more. Bay laurel, rosemary, celandine(don't allow it to go to seed!!), periwinkle, Mexican coriander, hollyhock(over-wintering basal rosettes), hens and chickens and I seem to remember that lady's mantle stays green all winter. There are undoubtedly others, but I can't recall seeing them stay green in winter, out of doors.
I am so excited to have found your website...it has allowed me to dream my way (somewhat realistically) through the gorgeous herb books, planning my own!
