I have a great herb garden. I would like to store for winter. Do I cut from root or just cut below the root?If the edible or medicinally useful part of the plant is the root, then the root is generally harvested in the fall by pulling the whole plant up and either discarding the rest or replanting the top (as in echincea) with about 1 to 2 centimeters of root and keeping the rest of the root as your harvest. For plants like horse radish, you dig up what is needed and whatever pieces of root remain behind will regrow your patch.
