I was born in Indonesia. I have a question for you, if you know anything about zedoary, lesser galangal or kencur root? Awaiting for your reply and thank you for your an assistance.I do not know about this spice or how to use it, but was interested to learn about it, so thank you for your question. I read that it is a root/rhizome and with a smell similar to mango and turmeric. It is sold as a powder in Indonesia (called kentjur in Chinese stores) or dried slices. Two types are sold in Indian markets: curcuma zedoria and curcuma zerumbet. It is used to flavour curries such as seafood, lamb and chicken. This link describes the flavour as "warm and ginger-like, slightly camphorous with a bitter aftertaste". If you google the name there are many links.
