I bought some horseradish tubers and have grown them since spring. I would like to know how to use them. I took one tuber and peeled it, then put in my chopper until it was fine then put it in catsup. How long will it keep in the refrigerator?This is not really my area of expertise but I can tell you that you are using it in the correct way. Horseradish roots must be peeled before using. They do not give off their pungent odour until they are cut. Refrigerate root unpeeled, wrapped in plastic until ready to use. It can be chopped as you did, or grated. Once chopped or grated, the flavour of fresh horseradish starts to deteriorate. Flavour is strongest when used alone but it is often toned down a bit by combining with cream, sour cream, apples, or a cream and egg sauce, sometimes with a little lemon juice or vinegar. These sauces are usually not cooked as the heat destroys the pungency.
