I would like to know if I can freeze left over fresh herbs. I always have to purchase more than the receipe calls for.Yes, you can freeze left over fresh herbs. They can be frozen in plastic freezer or ziplock bags. Because they cannot be refrozen, you should divide into portions as much as you are likely to use at a time. They keep for several months, and the colour keeps well, but they will lose firmness on thawing and you can only use them in hot dishes in which do not require herbs of a fresh, firm consistency.
